I know it's not pretty, but it's good, I swear!
Put garlic and onion in a soup pot with a bit of olive oil and butter. Later, add russet potatoes and carrots, roughly chopped. Add a whole lot of chili powder, less of paprika and cayenne. Salt to taste. Cook. Then, add a can of full fat coconut milk and about 2 cans of water, plus some vegetable bullion base. Cook, then roughly run through a hand blender. Add chick peas and andouille sausage (sliced), cook then top up with a handful or two of spinach.
