Cinnamon Raisin Banana Bread Pudding
Cut up 3 large cinnamon bagels, toast until golden at 350* in 9x13 baking dish
Whisk 4 large eggs with 1 c (300 g) mashed overripe banana, 2.5 c (20 oz) unsweetened almond milk, 1 tsp vanilla extract, 2-3 drops almond extract, pinch salt
Pour mixture over bagels, let sit for 5 min
Thinly slice a few butter shavings (~1 tsp) and scatter over the top
Bake for 45 min
Serve with banana ice cream and whatever toppings you have on hand (I used crumbled pumpkin bars)
