Fry an onion in olive oil and butter. Slowly. After a while add garlic and red chilli. I used a whole dried one, go as spicy as you like. When the onions and garlic are cooked add a run of good whole Italian tomatoes. Fresh tomatoes work too. Cook the sauce down for a bit then add worcestershire sauce and season. Bring the tomato sauce to a gentle simmer. I add a teaspoon of sugar at this point too. Brown sugar is best of you have it. Next thing: stick on the grill and grate some cheese. Cheddar is good but a mixture of cheddar and hard cheese is the best melty mix. Fry an egg in butter how you like it. Runny yolk for me please! Undercook the egg from how you like it as it's going under that grill. Put a tortilla on a plate. I ran out and used a chapati which worked well. Put your now tasty tomato sauce onto the tortilla, swirl it round all fancy leaving a wee space for your egg in the middle. Put the egg in it's tomato-ey resting place, sprinkle grated cheese on then put it all under the grill to melt the cheese. Place some coriander leaves on top and serve with a delicious lime and your favourite hot sauce.
