Beautiful dough all ready to become spinach theplas (flatbreads) for my boy ? packed full of fresh spinach, garlic, ginger, ground cumin, ground coriander, turmeric and a pinch of chilli powder, with salt, olive oil, atta (whole wheat flour) and water to bind. And it really is that green!

I have got full details on my blog, but basically, I use a 250g bag of baby spinach, put it all in a food processor, add a couple of garlic cloves, some puréed ginger, the spices and salt and chop it all up; I then add a couple of tablespoons of oil and start to add flour; I tend to do it by eye, pour in flour then whizz it all up and assess whether I need more or not; then add small amounts of water until it starts to come together as a dough. Then take it all out of the processor and bring it together by hand, adding more flour or water as needed.
Leave it to rest for 30-60 minutes
Break pieces of and make balls and then flatten them down to flat circles, not mega thin
Cook in a pan in the stove over a medium heat
