Oisobagi (Stuffed Cucumber Kimchi) made with Persian cucumber stuffed with seasoned radish, chives and green onion. Salt brine cucumber for 45 min-1hr before stuffing. Seasoning for stuffing: Gochugaru (Korean chili pepper flakes), sugar, salted baby shrimp, minced garlic, ginger and fish sauce (optional). Crunchy and refreshing dish to add to summer dinner table.
