Cheeseburger Soup! This was a request from a friend who's under the weather. I must have looked at 20 different recipes for this, but in the end, I went with my gut! So I browned a pound of ground beef then added 2 large potatoes, diced (peel them if you want), 2 large carrots and half a large onion (also diced) and a handful of dried parsley. I let it hang out over medium heat, then added a can of diced tomatoes and 3 cups of chicken stock. I let it simmer for about 25 minutes (until the potatoes were tender), then put the heat on low and added 16oz. of cubed velveeta (I know- I am horrified, too- but when you need smooth, emulsified satisfaction quickly, you can't beat it). The velveeta also made any extra salt unnecessary.
I garnished it with chopped pickle and basil.
Changes for next time: use beef broth instead of chicken, replace 12oz. of broth with beer, ditch the basil. #notarecipe #soup #cheeseburgersoup
