These are my best ever after tweaking this recipe quite a few times ... as fluffy as "regular" pancakes but incredibly light and fluffy due to the gluten free flour combo. Use a cup each of gluten free all purpose flour and buttermilk, plus 1/3 cup of ground almonds, 2 teaspoons of baking powder, two eggs, smidge of vanilla, and a big dollop of coconut oil. Cook on a hot cast iron skillet with lots of butter. Only eat with real maple syrup or you miss the full effect. ?
