The simplest salad
Massage kale with a red wine vinaigrette
Top with a scoop of quinoa
And 1-2 soft (7 minute) boiled eggs
Bring pot of water, enough to cover eggs by an inch or two, to rolling boil. With a spoon carefully drop eggs into water and keep at rolling boil for 7 minutes. If the water starts to get out of hand, reduce the heat a bit, but not enough to stop the roll. Immediately rinse eggs in strainer under cold water until eggs stop steaming and are cool enough to peel.
