Matzo Brei season!!! Whisk 5 eggs with salt and pepper. Run 2 to 3 sheets of matzo under warm water for 30 seconds. Break into jagged squares, then mix with the eggs. Melt butter in a skillet, slow scramble the matzo egg mush. Eat while still runny (or fry til crisp) and dollop some ricotta on top.
