I have a seemingly endless buckwheat noodle supply: cold buckwheat noodles topped with toasted nori. To eat, dip in mentsuyu (soak kombu in water for 30 min, add soy and mirin, simmer until almost boiling, add bonito flakes and steep until cool.) Served with leftover bulgogi and pickled daikon.
