2.5 cups of leftover cooked grains
1cup of mixed herbs/scallions
1 cup thinly sliced greens
5 eggs beaten
1 tsp cumin
1/2 tsp salt
1 cup of bread crumbs
1 tsp baking powder
1/3 cup cheese of your choice

Let sit for a minute before shaping, bake at 400 for 15-20 minutes flipping when the bottoms are brown

I think any leftover cooked grains would work, I used half quinoa and half brown rice because that's what I had bits of in the fridge
