Spinach & Green Garlic potato cakes
Sauté 3 c chopped fresh spinach and 1 T chopped green garlic (or 1 tsp reg. Garlic) with some olive oil until spinach is wilted, add 1 tsp fresh lemon juice. Stir into 4 c of cooked and mashed potatoes adding one egg, until combined. Form patties about the size of your palm with damp hands to prevent sticking. Fry in pan 3 minutes per side.

Should you drain the spinach before adding the mash or let the mash absorb the liquid?

There shouldn't be much moisture released, it might be "damp" but certainly not "dipping" hope this helps!
