Spinach & Green Garlic potato cakes
Sauté 3 c chopped fresh spinach and 1 T chopped green garlic (or 1 tsp reg. Garlic) with some olive oil until spinach is wilted, add 1 tsp fresh lemon juice. Stir into 4 c of cooked and mashed potatoes adding one egg, until combined. Form patties about the size of your palm with damp hands to prevent sticking. Fry in pan 3 minutes per side.
