Brioche buns for tonight's lamb burgers. I've been working on my brioche buns. I think the buns need to be lighter and more airy then a brioche loaf or rolls. The trick I have found is to make a wet dough and mix it for 20 minutes until the gluten is really developed. Then refrigerate it until it is very cold. This will make it easy to work with while shaping the buns. I made ring molds out of an old silpat because the dough spreads while rising as opposed to rising up like most traditional breads. As it spreads it meets the mold and then rises. I have also started to put my egg was in a spray bottle so the wash is more even and it has worked very well. #baking #bread #buns #cookout #tips #norecipe
