Bake root vegetables at 425 for 20-30 mins, serve fries with horseradish yogurt dip:

Combine a 1/3 cup greek yogurt
to a heaping tablespoon of prepared horseradish,
tablespoon of mayo,
teaspoon of mustard,
a scallion or a few chives,
small shake of garlic powder,
& salt and pepper.
