Black Garlic & Miso Hummus: to start, add 2 cups cooked chickpeas, 1/4 cup tahini, 1/2 of a head of black garlic (peeled), 2 tablespoons white miso, the juice of 2 lemons and 1/4 cup olive oil to the bowl of a food processor. Process until smooth, adding water or olive oil by the tablespoon until a smooth, silky consistency is achieved. Taste for seasoning. If it needs more richness add 1-2 tablespoons tahini. If it needs more acid add lemon juice. If it needs more salt - add pinch by pinch. Top with toasted seeds and another good glug of olive oil.
