While it's a far cry from baked elephant beans (gigantes), it turned out wonderfully. I made it into a partially-pureed partially-chunky soup (lima bean, onion, garlic, carrot, celery, tomato, bay leaf, extra-virgin olive oil, and oregano) and quickly made a complimentary flatbread topped with garlic, onion, oregano, and kosher salt.
