Garlic Parmesan Crusted Chicken Breasts with Roasted Sweet Potatoes and Brussels Sprouts
Cut Brussels sprouts in half and chop off ends.
Dice sweet potato and add to a bowl with Brussels sprouts.
Stir in olive oil, salt, pepper and cumin.
Transfer to sheet pan and bake at 350 for 40 minutes.
Flatten chicken breasts with Saran Wrap and a cast iron pan or coffee mug.
Spread a spoonful of sour cream on each breast and bake at 350.
While chicken starts cooking mix sour cream, garlic and Parmesan cheese in a bowl.
After chicken has cooked for about 10 minutes top with cheese mixture and cook 15 minutes more.
Put under broiler for 1 minute if more browning is needed.
