Sesame cashew cauliflower "rice": in a large skillet, sizzle a bay leaf and broken cinnamon stick in oil with a handful of whole raw cashews until they're light brown; remove the nuts and add a thinly sliced shallot, along with a couple pinches of ground cumin and a small handful of sesame seeds. Sauté for 1 minute. Add cauliflower cut in the food processor to the size of grains of rice; sprinkle on a couple pinches of salt, stir everything together, press it down into the pan and then let it cook over medium heat for about five minutes. Don't stir it too much, as you want to give the cauliflower a chance to brown a bit. Stir, and cook for another 4-5 minutes, until cauliflower is soft. Right before serving, return the cashews to the pan, remove bay leaf and cinnamon stick, squeeze a lime over it, and serve. ;o)
