Mix all ingredients in a large bowl and mix with a wooden spoon, it should be tacky and sticky. Cover and let sit overnight (12-18 hours) in a dark corner.
Pull the dough out onto a floured surface and make into a ball by pulling the edges into the center. Wrap steam side down in a floured kitchen towel and let ready for another hour or two.
Preheat oven to 475 and add in a Dutch oven to preheat with it. When your dough it ready, invert your dough, steam side up, and bake for 30 minutes covered. Uncover and bake for another 10, or until it's a deep golden color.
Enjoy after an hour.
