Plain Couscous with almost equal amount of roughly chopped parsley, softened, dried cranberries, salt and pepper, extra virgin olive oil or in this case a Walnut flavored oil a bit of cumin. Mix well and enjoy! Top with fried onions if desired!
Sorry. My first post and I didn't get the Name of the dish... Parsley Couscous Salad... Very forgiving and easy to make with what you have on-hand! Love it and many times replace the Couscous with Quinoa!
