I can't say enough about this sundubu jigae! Quick, low calorie, gut-healthy, and delicious. Sauté 4oz ground pork, then progressively add green onion (whites), sliced shiitake mushrooms, garlic, ginger, and a cup of chopped kimchi with its juices. Add a few cups of stock and a tablespoon of gojuchang if you have it (otherwise maybe sriracha or hoisin?). Let it come to a simmer and gently stir in cubed soft tofu. You can also top with an egg (not that pretty in this case but totally amazing).
