Warm Green and white bean pasta salad
I used a small can if camellia beans, drained and rinsed, a large handful of fresh tiny string beans, trimmed and cut to 1" pieces. Cook the penne pasta to aldente. Steam together the beans until just warm but still crunchy. The vinaigrette is a simple lemon juice and eeov mix with salt and pepper to taste. I use a small glass jar with a lid to emulsify by shaking vigorously.
Place the pasta in two large bowls, add finely sliced prosciutto and fresh parsley, then the bean mixture. Toss with vinaigrette and top with thin shavings of grana padano or parmesano reggiano
