Roasted veggies & plantain with dill, lemon juice & spices
Toss cut up mushrooms, asparagus, bell pepper, dandelion greens, a plantain, green onion, fresh dill with turmeric, cayenne, garlic powder, salt and EVOO. Add 2 eggs to the pan. Roast @375 for 20 min or until fragrant and eggs cooked.
Sprinkle with lemon juice & black pepper. Serve with sliced avo.
