DAIRY FREE MASHED POTATOES
In a bowl, place 1 head of cauliflower florets, 4 garlic cloves and olive oil, toss to coat, roast in a 400°F oven until soft and they develop a caramel color .Remove from the oven and puree in a blender adding chicken stock as needed to get a thick cream consistency, Set aside.
Peel and cut the potatoes in big chunks, place them in a pot of cold water and bring it to a boil, lower the heat and cook the until you can pinch them easily with a fork and they fall back off. Strain them, mash them with a fork or a ricer and mix with the cauliflower puree. Once mashed with the fork you can whip them with the cream in an electric mixer.
