Liberally PAM large bowl & salad tongs. Pop corn (I used microwave). Combine 3/4 c. white granulated sugar + 1/4 water in 2 q heavy bottomed pot, bring to gentle boil, roughly 8-9 minutes on medium high, or until caramel is shiny toast colored. Remove from heat & add 3 Tbsp unsalted butter and mix until combined, Return to low heat, add 2 Tbsp white miso, 1/2 tsp baking soda, 1/2 tsp kosher salt. Break up with whisk and add immediately to popped corn. Toss to coat & let cool to harden.
