Apple and Rhubarb Crumble.
Roast chopped and peeled apples and rhubarb in the oven in a roasting dish with a sprinkle of castor sugar for 30 minutes. In a bowl sift in 35g flour and 40g self raising flour, add 100g of butter mix in with your hands and fingers to create a crumbly consistency, add a cup of oats and half a cup of brown sugar, mix well. Add crumble mixture to macerated fruit, bake until golden for 20-25 minutes in a preheated oven on 180 degrees Celsius. Serve with a scoop of homemade ice cream, fresh out of the oven for best results. Serves 6-8.
