Easy Weeknight Beef Stew: Start with beef braised in red wine that you froze when you made a double batch and then defrosted for this meal. #CookOnceEatTwice Add to the base you made on Sunday (10 minutes active time): cook a chopped onion, cubed unpeeled Yukon gold potatoes, chopped carrots and celery in oil until the onion is translucent and the potatoes a bit brown on the edges. Sprinkle on a couple pinches each of dried thyme and marjoram and a good pinch of salt; cook for a minute, stirring; add 2 cups rich chicken stock (homemade, from your freezer), bring to a simmer, cook for 5 minutes. Cool, put in the fridge until ready to use within a few days. #weekendbase While base is coming to a boil, cut beef into bite sized pieces; mash with the back of a spoon several of the potato pieces to thicken the stew; add the beef, a bit more stock, if you want, and a handful of parsley, chopped; cook just until the beef is heated through.
