Super quick and easy Thai noodle bowl. Mix together 1 part soy sauce to 2 parts water, some brown sugar, sriracha, fresh ginger, a splash of apple cider vinegar and garlic. Bring to a boil and throw in some carrots cut lengthwise and cook until soft. Meanwhile chop your veggies, cabbage, bell pepper, green onion and cilantro. throw some rice noodles in with the carrots and your sauce and cover until noodles are soft, and then throw in your veggies and let them simmer for a couple minutes. Throw it in a bowl and scarf it down.
