Mung Bean Pancake
Soak peeled mung bean in water for several hours. Use the blender to grind the mung bean to make pancake batter. Add pork, chopped green onion, blanched bean sprouts and kimchi (optional). Squeeze out some of the kimchi juice before adding in the mix. Season with salt and pan fry it with vegetable oil. Added sliced sweet peppers before flipping over. Served with onion, soy sauce dipping.
