Brown ground chicken with whatever seasoning (this time I used Williams and Sonoma Poultry Blend) then add sliced Bok Choy, jar of crushed tomatoes (I like fire roasted) and Castelverano olives. Simmer a few minutes and make 4 wells for the eggs. Finish in oven til eggs are done to you liking. I put it over roasted Butternut Squash because the store was out of Spaghetti Squash.
