I work with an Indian-American woman who shared a jar of homemade spice mix and this (not)recipe for cilantro chicken, which she said is a weeknight go-to and a riff on a Madhur Jaffrey dish. I tried it tonight -- definitely a keeper.
To make it, process a whole bunch of cilantro (stems and all) and a green chile for a few seconds. In a large skillet, heat vegetable oil over medium heat, then add about a tablespoon of the spice mix (turmeric, cumin, coriander, ginger, cayenne), let toast briefly, then add about 1.5 lbs of chopped chicken breast. Sauté until the chicken is no longer pink, then add the cilantro/chile mix, 3 tablespoons of lemon juice, and garam masala to taste. Cook for another or so, until the chicken is cooked through. Serve over rice. #weeknightdinner
