Give omelette a little make over, rolled it up and serve it with salad on the side!

Shallot, Spinach, Carrot and Feta Rolled Omelette.
1 whole egg + 2 egg whites(or just 2 whole eggs)
1-2 shallots thinly sliced
1/4 cup shredded carrots
1/2 cup of spinach
1/4 cup crumbled feta
Pinch of black pepper or to taste
Salt (optional, as the cheese pretty much filled up the flavour for me)
1 tbs EVOO

Heat up the pan and lightly brown shallots and carrots in EVOO, then pour in beaten eggs to cover the whole pan. When the eggs are about half cooked/set, add in spinach and crumbled feta followed by black pepper. Remove pan from heat and slowly roll the omelette into a log with the help of a spatula and chopsticks or tongs. Once it's cool enough to handle, cut it up about an inch per piece or you can serve it right away.

The salad on the side is just a simple one,
1 handful of mixed baby salad leaves
1 tomato
Small handful of raisins and cashews
Drizzle of EVOO and a dash of black pepper.
