Traditional idlies ( steamed rice and lentil cakes) are a beloved breakfast dish in India, especially in the south. 3 cups of parboiled rice and 1 cup of urad dal soaked and blended into a smooth batter. Leave to ferment overnight (adding salt for the flavor of course) and steam in conventional idli steamers or use silicone cupcake baking cups. I sprinkled some forbidden rice flour using a cupcake stencil over the batter to get these cute designs. #vegan #glutenfree #healthy
