Set oven to hot.

Toast a few cumin, coriander, fennel seeds, a star anise, half a cinnamon stick and two dried red chillies until they smoke. Grind.

Coat cauliflower heads in rapeseed oil and tip in the ground spices with salt and pepper.

Roast in the hot oven for 15-20 minutes or until cauliflower gives to a sharp knife.

Great with a smoky cheese sauce, salad or as a spicy side dish
