Roasted Tomato Soup: ?This recipe is perfect for all seasons. It is simple and easy. Roast any kind of tomatoes you like (I love a good batch of heirloom tomatoes - especially multi-colored ones - b/c they are so so pretty). When roasting - you can add salt, pepper , and any herbs you are in the mood for. Usually, I’ll add crushed red pepper and some fresh or dried thyme. You can also make it more middle eastern and add some bolder flavors like a dried savory spice, fresh turmeric, or come up with your own moroccan medley - i.e. cardamom, coriander, cinnamon, allspice, etc. While the tomatoes are roasting you can cook up some onions and shallots in some olive oil in a pot. When the tomatoes are done roasting, add them to the pot with some vegetable or chicken broth. Depending on whether you like it chunky or smooth, you can throw the entire mixture into a blender and pulse it until you get the consistency you want. Once don’t blending, throw it back into the pot, and add some type of cream or milk - whether almond milk or whole milk - and let it simmer. Taste test. If it’s good to go - place in bowl, and garnish with some goat cheese and herbs of your choice. Yum!! ???
