Would you believe that this lunch from our Community Manager Kaitlin Bray came out of a jar? She layered sautéed shallots and mushrooms with cubed tofu and cooked lentils, then rested sliced radishes and cucumbers on top and filled the jar with arugula. She arranged it on a plate, added crumbled feta, and dressed everything with a simple lemon and olive oil vinaigrette.
