Poached quinces with star anise, lemon and vanilla. I just used water and sugar and spices and let it simmer for one to two hours. The transformation is beautiful from pale and woody to a deep ruby-red and an glorious flavour. Can be used on cake, for crumble or served with ricotta or mascarpone.
