Here's my go-to recipe for a easy whatever nuts you have granola!
On a baking sheet, spread:
3 cups rolled oats
1/2 cup shredded coconut
2 cups any nuts + seeds
1/4 tsp cinnamon
1 tsp kosher salt
1 tsp vanilla extract
1/4 cup honey
1/4 cup maple syrup
1/4 cup olive oil
Mix thoroughly until every nut and oat is lightly coated and spread everything in one even layer, pressing gently with a large spoon.
Bake at 350 for 15 minutes, stir and bake for another 15 minutes until golden
Add 1/2 cup of raisins or other dried fruit, let it cool and store in a mason jar or other airtight container.
