Supreme pizza stuffed peppers!
Cooked quinoa with sautéed onions, garlic, oregano, thyme. Mix cooked quinoa mixture with chopped tomatoes, sautéed mushrooms, pepperoni, Italian sausage, pesto, Parmesan and shredded mozzarella.
Fill green peppers with quinoa mixture. Place peppers in baking dish. Add splash of water to dish. Bake at 375 for about 40 min, then top with fresh mozzarella and bake another 5-10 min.
Top with more Parmesan cheese and chopped parsley. Enjoy!!
