SAFFRON CRISPY RICE CAKE: This is traditionally called tahcheen in Farsi. It is a crispy rice cake that is made in the oven. Begin by bringing water to a boil with salt and grape seed or olive oil. Add the rice. Cook until the rice is al dente. Strain the rice. Let it cool a bit. Mix together egg yolk, yogurt, and saffron water (this can be made ahead using boiled water and ground saffron). Add the rice to the mixture. Grease a cake pan and add the rice mixture. Bake in oven for at least 45 minutes to even over an hour to get it extra crispy. This dish can also be made with spinach inside, eggplant, or perhaps chicken! Recipes to come :)
