Whatever-You-Have Noodle Salad with Peanut Sauce
One of my go-to meals whenever I'm stumped on what to make. I usually use soba noodles but today I decided to make use of some brown rice noodles that were sitting in the cupboard.
Boil your noodles.
While that's going on:
Grab whatever veggies you have in the fridge. Today I had a cucumber and some tomatoes. Slice and dice and throw them into a bowl with the cooked noodles.
Next - the peanut sauce. Mix together unsalted/unsweetened peanut butter (or any other nut butter you have - almond works great), soy sauce, vinegar, mirin, honey, grated ginger, sesame oil and chili oil (or fresh chilies). If it's too thick, add a spoon or two of noodle water to loosen it up a bit.
Add the sauce to the noodles and veggies. Toss everything together until it's all coated. Add sesame seeds if you'd like.
Super easy, pretty healthy, and it's easy to adjust to whatever ingredients you have lying around!
