Soft coddled egg over mashed potatoes with chives- fill a jar with mashed potatoes, butter the top and fill with an egg, season and cover tightly with lid. Fill a pot with water just below the top of the jar and bring to a boil. Lower to a simmer and place in jar for 15 min or until whites are JUST barely set. Meanwhile make toast and sautée asparagus in olive oil for dipping. Eat in bed.
