Taking a note out of Thalia's book and making homemade crème fraïche this weekend: just 3:1 cream to buttermilk, whisked till smooth and set in the fridge for 2-3 days. Then, it will be thick and tangy, ready for swiping across toast with lox or swirling into creamed greens.
