Ramp pea and spinach risotto #rampitup
Sauté and onion and garlic in a pot, add any dried herbs you wish. Add in chopped ramp bulbs and allow to soften. Add arborio rice and a glug of olive oil, let it soak it up. Add a ladle of hot stock and let it bubble down, add another ladle and let it bubble down.. Repeat until rice almost cooked. Add in peas, chopped ramp leaves and spinach, allowing to wilt. Perhaps add in a touch of goat cheese or ricotta- make it your own!
