As for most baking, this clearly *is* a recipe, but here goes:
To make Banana Chocolate Chip Muffins, beat 100 g vegetable oil with 100 g dark brown sugar, and a splash of vanilla. Add two eggs and beat until thick and glossy.
In a medium bowl, whisk together 125 g each of whole wheat and all purpose flour with 1 teaspoon/5 ml of baking soda, a pinch of salt, several good dashes of cinnamon, and a pinch each of ground nutmeg and cloves. Mash 4 ripe bananas/2 cups.
Beat half of the bananas into the wet ingredients; fold in half of the dry ingredients, followed by the rest of the bananas, finishing with the rest of the dry ingredients.
Gently fold in 170 grams of chocolate chips and a large handful of chopped toasted nuts.
Bake in paper-lined muffin tins at 400° for 15 minutes; turn the heat down to 350° and bake for another 8 to 10 minutes. This gives them a nice dome shape. #baking #muffins #bananabread #HowMotherCooks
