Scallops and semi-low carb risotto primavera... Steamed a head of cauliflower, mashed it and set it aside. Then I sautéed ramp bulbs and onion with oil and butter and made risotto with sushi rice (short grain and a great arborio sub!), chicken stock, asparagus, peas and ramp greens! Top with parm and some seared scallops (fresh from the Union Square farmers market). Yummmm.
