Sizzle butter in a pan until foamy. Add chopped shallot and cook until wilted. Add a lot of clean spinach leaves. Douse with cream. Simmer a couple of minutes, season well with salt pepper and freshly ground nutmeg. Crack an egg into the spinach, cover the pan and cook until the egg is set. Serve hot.
