Veggie eggies bennie (eggs Benedict)
This dish is so simple and easy but feels really luxurious. So here's what you do:
To make hollandaise:
Melt a stick of butter. In a small bowl over a double boiler, whisk 3 egg yolks with a tablespoon or two of lemon juice. Toss in some salt and pepper. Then, gradually whisk in the melted butter until the sauce thickens.
Chop some vegetables (I used avocado and radishes) and toast some bread. Poach a couple eggs. Stack em all up and top with hollandaise!
Tip: the key to poaching eggs is adding a few tablespoons of vinegar to the water.
