Cheesecake is made with cottage cheese that's creamed through a sieve and mixed with eggs and gelatin mixture, then folded with whipped egg whites and cream. A little lemon juice, zest and vanilla goes in for flavor and aroma. It's best refrigerated over night before topping with your favorite fruit topping. Pictured with blueberry but any fruit topping works and you can even top it with fresh fruit in season.
If you love the crust so much you can make extra and put it on the cake as topping well.
