Semolina helva which is my mom's best dessert made with love , it is cooked with semolina, sugar, cheese and pistachio on the top; first semolina is roasted with fat till the colour returns a little bit yellow, in another pan sugar and eater is boiled to make sherbet, than sherbet is added to roasted semolina when both is hot, cook the mixture for a while and add antep cheese (traditional sheep cheese produced in Gaziantep in the southeast of Turkey), mix the cheese and add pistachio on the top for serving.
